“Ever Tried. Ever Failed. No Matter. Try Again. Fail Again. Fail Better.” – Samuel Beckett

“Strive for continuous improvement, instead of perfection.” – Kim Collins

Michelin Guide:

“A former pub-cum-grocer’s named after its first owner. The original bar counter and shelves remain and the room has a homely feel. Flavoursome dishes are eye-catchingly presented and make good use of local ingredients, some of which they grow in the garden – the purple sprouting broccoli is wonderful.”– Michelin Guide Inspectors

The MICHELIN Bib Gourmand: Good quality at a good value – ‘Bibs’ are awarded for simple and skilful cooking

McKenna’s Guides

“The food Richard Milnes is serving in Dillon’s is so seamlessly wrought, so supremely elegant, that he makes everyone else look like they’re trying too hard. Part of his brilliance is the way in which simple things are shown ultimate respect – brussel sprouts, for example, served in a warm salad with potatoes and hazelunts and Milnes’ own riff on a Caesar dressing.”

“Richard Milnes is one of the great cooks, because his achievement is to make things taste of themselves. His secret surprise, however, is that Mr Milnes actually manages to make things taste more of themselves. You see this wizardry, in particular, in his vegetable cookery, for he has a way with the everyday things of the vegetable plot that stops you in your tracks – the savouriness of that celeriac steak; the deep umami of that roasted onion; the sweet satisfaction of the swiss chard gratin.”

Georgina Campbell’s Ireland

“Well known West Cork chef Richard Milnes’s menus may be short but they are packed with quality, reflecting the superb local produce available – and he is a terrific chef. While thinking very local in terms of main ingredients, influences that come from far and wide ensure plenty of variety.”

Tripadvisor Reviews

“First visit to Dillon’s last Sunday with two others. It was fantastically relaxed. I’ll had fish, and God, I wish I could cook it as absolutely perfect and eat it every day! Great coffee, cheese board. Friends equally as impressed. Can’t wait to return.” – kizzc2016

“Only one word can cover this restaurant Amazing. We had lunch on Sunday – amazing fresh beetroot and feta beautiful scallops and a chocolate desert to die for!! The gin and tonics were a treat also. A little out of the way but so worth the trip. Will be back, made us feel so welcome – Even with children” – Emv0

“Dillons’ was such a delight in the small town that it sits. If you happen to be ANYWHERE in the vicinity, you must eat here! It’s so romantic and quaint and the food is out of this world. My Ribeye cooked to perfection included a horseradish butter with wild mushrooms, I also had seared scallops in a chorizo sauce, and desert was a homemade made-to-order plum pudding with custard. Out of this world.” – Amy L

Reviews from Facebook

“The food was super. Everything was cooked on point, and complemented the other ingredients on the plate. This is the sort of cookery that both the plainest of eaters and faddiest of foodies could both enjoy.” – Deirdre Culhane, Facebook

“Certainly deserves 5 stars, Dillon’s is one of Corks leading Restaurants, probably the best outside of cork city at the moment.”  – Sullane River, Facebook

“What an experience and such a treat to dine in Dillon’s ! The food from start to finish is quality. You can still taste it long after your finished … presentation is of its highest standard. They give as much to there desserts as starter and mains which is rare to find.”- Kay O’Brien, Facebook
